Beer Can Chicken Alton Brown
Apr 10 2014 Preheat the oven to 425 degrees F.
Beer can chicken alton brown. Open the can of beer and take a few sips andor pour about 14 of it into the dish or pan. Set the can in the center of the dish. Adjust the chickens legs so it stands proud and tall.
After 10 minutes lower temp to 350F and bake for 50 minutes. Place a baking dish roasting pan or dutch oven on a baking sheet. Place the chicken.
Place the chicken open end bottom end over the can. If cooking the chicken on the can using a church key-style can opener make 2 additional holes in the top. Put the chicken in the oven and bake at 425F for 10 minutes.
Brine the chicken in the refrigerator for 1 hour then remove from the brine wash again and pat dry with paper towels. Pop the tab off the beer can. Cooking times will vary depending on your oven and chicken.
Pour half of the beer 34 cup over the soaking wood chips or chunks or reserve for another use.
